Easy Grilled Strawberry Shortcake

This Grilled Strawberry Shortcake is a super-easy yet impressive summer dessert. You grill some store-bought angel food cake and you grill some honey-dipped strawberries. Then you top it with a puff of lemon whipped cream. It tastes like summer!

This dessert recipe puts together my two new favorite things: Grilled Strawberries and Grilled Angel Food Cake. Never grilled strawberries or cake before? Once you try it, you’ll wonder why you waited so long!

How Do You Grill Strawberries?

To grill strawberries, you thread the berries on skewers, brush them with a bit of honey, and then grill just until some dark marks appear. The berries only take a couple minutes on each side to develop some grill marks. Grilling makes the strawberries jammy and sweet on the outside but they still hold their shape.

How Do You Grill Cake?

This may seem like an unlikely candidate for the grill, but trust me on this, it’s worth it.

You slice the angel food cake and then put the pieces on the grill for a minute or two per side. The grill marks and slightly crunchy caramelized exterior impress everyone. EVERY TIME. And no need to make your own angel food cake either. This dessert is glorious with store-bought cake!!!

Making Whipped Cream

For the whipped cream, you can use a can or make some yourself. If you’re making it yourself, here is a whipped cream how-to as well as some tips.

As to flavoring the whipped cream, you can go with plain sweetened whipped cream just as it is. Or, and this is kind of amazing, you can add some lemon zest to the mix. It is so bright and fresh tasting. It really lightens everything up.

Putting The Grilled Strawberry Shortcake Together

Put a slice of grilled cake onto a dessert plate. Place a skewer of strawberries beside it, leaning on the cake. Then top it with some whipped cream. I use fresh basil leaves to garnish this dessert. It just feels really summery to me, and the basil goes so well with the lemon whipped cream and with the strawberries.

If you don’t want to use basil, fresh mint leaves work really well too. Or you don’t need a garnish at all. This grilled dessert will be pretty and delicious either way. Promise. – Christine xo

DESCRIPTION

This Grilled Strawberry Shortcake Recipe is a super-easy yet impressive summer dessert. You grill some store-bought angel food cake and you grill some honey-dipped strawberries. Then you top it with a puff of Lemon  Whipped Cream. It tastes like summer!


Ingredients

Units Scale
  • 1 and 1/2 cups whipping cream
  • Zest of 1 lemon
  • 2 Tbsp. powdered sugar (confectioner’s sugar)
  • 1 lb. package of strawberries (about 24), hulled
  • 6 skewers
  • 2 Tbsp. honey
  • 12 oz. Angel Food Cake (store-bought or homemade)
  • Fresh basil or mint leaves for garnish (optional)

Instructions

  1. Pour the whipping cream into a medium bowl or the bowl of a stand mixer.
  2. Use the stand mixer or egg beater at medium speed to whip the cream for 2-3 minutes. Add the lemon zest and the powdered sugar.
  3. Whip until soft peaks form, 4-6 minutes more. Refrigerate until serving.
  4. Prepare grill for direct cooking over medium heat. Cut angel food cake into 6 wedges.
  5. Thread 4 strawberries onto each skewer.
  6. Drizzle each skewer of strawberries with 1 teaspoon of honey. Use a brush or fingers to spread it around and coat berries.
  7. Transfer berry skewers and angel food cake to the grill. Grill on one side until grill marks appear, 1-2 minutes. Flip and grill until grill marks appear on the other side, 1-2 minutes more. Remove from grill.
  8. Serve each slice of angel food cake with a skewer of grilled strawberries and about ½ cup of whipped cream.
  9. Garnish with basil or mint leaves, if desired.
