Healthy Kid-Friendly Summer Meals

It sure has heated up here in Florida over the past month. And from all the light and fresh recipes bombarding Pinterest I can tell that the rest of the US is warming up a bit too.

With this warmer weather comes my cravings for lighter meals. And my kids start asking for sweet cold treats.

And so, I’ve put together a round up of summery recipes for you. These are all family-friendly healthy recipes that are perfect for summer meals.

They’re also packed full of fresh produce. As the fruits and veggies get fresher and more plentiful in the summer, you’ll definitely want to try out some of these. I especially like the pesto made with cooked puréed cauliflower and kale. And speaking of kale, those green Popsicles are loaded with it. But you’d never know it. They taste fantastic. I even turned some of the leftover frozen mixture into a granita and served it to grownups. They had no idea they were eating kale either!

So, if you’re craving light summer meals like I am, check out these delicious healthy recipes. They’ll definitely put some bright fresh sunshine in your day.
