Gluten-Free Meatloaf Muffins with Zesty Italian Flavors
Meatloaf is now quick and healthy enough for weeknights. Especially if you make these legume and veggie-loaded Gluten-Free Meatloaf Muffins full of Zesty Italian Flavors.
I usually think of meatloaf as unhealthy and reserve it for a treat. But I need to remember that I can make a healthier version that’s perfect for any weeknight. I sometimes use ground chicken or turkey instead of ground beef and I also mix in some veggies to give it a healthy oomph.
For example, tomato slices garnish the top of these meatloaf muffins and there’s also wilted spinach and mashed beans in the meat mixture.
Because of the beans I didn’t use a binder or breadcrumbs here, making this a Gluten-Free Meatloaf Recipe. In fact, it’s totally allergen-free with no eggs, dairy, wheat, soy, nuts, shellfish or any other common allergen I can think of. (Note: The recipe calls for Italian Salad Dressing. Check the ingredients on the label or make your own to ensure that it’s safe for your family’s dietary requirements).
A typical meatloaf takes a long time to cook, making it less than ideal for weeknights. But you can absolutely make meatloaf into a quick-cooking dinner if you make Meatloaf Muffins.
Instead of shaping the meat mixture into a loaf, which takes a long time to cook through, you can fill muffin tins. They cook much more quickly and are just as tasty.
