Grilled Cheese Sandwich Ideas for Busy Weeknights

It’s National Grilled Cheese Sandwich Month. Today I’m guest-posting over at Katie’s Cucina with a round up of 50 Grilled Cheese Sandwiches that you’ve gotta try. Would you just *look* at these!

Last week in my newsletter I answered a question from a reader about quick weeknight meals (you can read the question and my full answer here). She said that after a busy day at work she often lacks the motivation to get into the kitchen. She was looking for quick, easy and healthy weeknight meal solutions.

One of the ideas that I had for her was to do a Sandwich Night once a week. There’s  no need to make a full big meal everyday. Take the pressure off and make some easy hearty sandwiches instead. Serve a salad on the side or a big bowl of fruit for dessert. Done!

One of my favorite go-to sandwiches is the classic Grilled Cheese Sandwich. I’ll often pick up two or three kinds of cheese and make a bunch of grilled sandwiches for us to share. We cut each one into several pieces so that we each get to try them all. It’s a fun dinner and super-easy. I usually serve the sandwiches with cold veggies like grape tomatoes, cucumber slices and bell peppers. Or, on a cold day, with either canned or homemade tomato soup.

The other thing I sometimes do for a great grilled cheese sandwich is to lay cheese on bread, top with leftovers and then with more cheese and bread. The leftovers can be leftover meats or roasted veggies. A grilled cheese sandwich can even be made with leftover mac n’ cheese (of course it can!) or sliced meatballs or leftover steak fajita toppings or leftover taco meet and toppings. The possibilities are endless.

That’s why grilled cheese sandwiches are so amazing. They’re just plain versatile.
