Marinated Baby Vidalia, Pomegranate and Goat Cheese Salad
Hello Festive Friend! The holiday season has arrived and today I’m telling you about the perfect holiday salad for when you gather your friends and family around the table. I developed this recipe for Herndon Country Farms who grow some rather wonderful onions. This recipe is for a cider-marinated sweet baby vidalia onions, pomegranate seeds and goat cheese salad with a cider vinaigrette.
Have you seen these onions at your grocery store?
They’re small globes of onion sweetness sold in bunches with the greens still attached. These ones are called Lil’ Bo’s Petite Sweet Vidalia Onions. I’m addicted to them and am so happy that they’re in season again and back on the shelves in the grocery stores.
These petite onions are salad onions with that classic sweet oniony bite. I like to add to their flavor with a bit of acid and sugar.
For this holiday salad recipe the onions are marinated in cider vinegar and sugar for a short time. Then the marinade is turned into a salad dressing, poured over top of greens, the onions, pomegranate seeds and goat cheese.
