I’m a skeptic when it comes to slow cooker recipes. I never believe they’ll turn out as expected.

Really? Put the ingredients in there and walk away? When I come back it will be dinner? Are you sure?

I spend the 6-8 hours while dinner cooks whirling with frantic doubts wondering if I’ll have to order pizza when dinner is ruined.

I’m amazed with the results every time.

When I signed up for the Food Blogger Slow Cooker week, I decided to challenge my inner slow-cooker-skeptic by making a breakfast. (Imagine how badly I slept due to all those nightmares of our ruined breakfast filling my head).

It did take a few tries (and a few sleepless nights) to get the Breakfast Pumpkin Bread Pudding right. But in the end this slow cooker recipe amazed me as much as all those dinners have.

You layer bread with an easy batter in the slow cooker, cover it, put it on low and let it cook. You wake up to a house that smells like pumpkin pie. And then you eat breakfast that tastes like pumpkin pie.

Amazing, right?

Warning: When making this slow cooker recipe, use a slow cooker liner (or be prepared to scrub!)

Breakfast Pumpkin Bread Pudding in the Slow Cooker

Put this bread pudding together the night before* and when you wake up your house will smell like pumpkin pie. This is meant to be a breakfast recipe and so isn't very sweet. If you would like it sweeter, increase the brown sugar to 1 and ¼ cups. I like to serve this bread pudding for breakfast with a drizzle of whole milk or cream. For dessert, a scoop of vanilla ice cream is lovely.

Ingredients
  • 6 eggs
  • 1 and ½ cups milk
  • 7.5 ounces canned puréed pumpkin (that's ½ of a 15 ounce can)
  • ¾ cup brown sugar
  • 2 tsp. pumpkin pie spice
  • 1 tsp. vanilla
  • ¼ tsp. salt
  • 1 Tbsp. butter
  • 1 (16 oz.) loaf of sliced cinnamon bread
Instructions
  1. In a medium bowl lightly beat the eggs with a whisk and then add the milk, pumpkin, brown sugar, pumpkin pie seasoning, vanilla and salt. Whisk until just combined.
  2. Rub the butter along the bottom and all around the sides of a 3 quart slow cooker like this one I've linked to here. Spoon 1 cup of the egg batter into the slow cooker. Lay 3 slices of bread in a single layer onto the batter in the slowcooker, overlapping the bread slightly so that they fit. Add ½ cup more batter and then 3 more slices of bread. Continue until you have used up all the bread. Pour remaining batter over the top.
  3. Turn the slow cooker to low, cover it and let it cook for 7-8 hours. Remove lid and, leaving the slow cooker on, for 20 minutes to evaporate some of the moisture.
Notes
*Consult your slow cooker's safety instructions to ensure that you can leave it running unattended overnight. I don't really like having anything running while asleep and urge you to be cautious when doing so and to do it at your own risk.

    Today, I went to the beach with my kids. I found a sea shell and gave it to my
    4 year old daughter and said “You can hear the ocean if you put this to your ear.” She put
    the shell to her ear and screamed. There was a hermit crab inside and it pinched her
    ear. She never wants to go back! LoL I know this is completely
    off topic but I had to tell someone!

    Thank you for your reply to my comment about the College Inn ad. I am not looking at the recipe on a computer but on an IPad. Today the College Inn ad is not blocking the recipe, but a notice for for a Silver Dollar Sandwich recipe is blocking it instead. The ad does not change size and is just a sliver, but you cannot read one line of the recipe, which is the line for the milk. As I mentioned above, I hit the refresh button and briefly saw the ingredient.

    I would love to see this recipe but because of you a popup add that comes up in the middle of the recipe I can’t read it.

      If you click the refresh button you will briefly be able to read that the recipe calls for 1 1/2 cups milk before that College Inn ad comes back and blocks everything out. I will probably try the bread pudding recipe, but am less inclined to ever try anything out out by College Inn. Ads on blog sites are perfectly OK with me, but ads that cover an important part of the site are not and I tend not to come back to the site or the product being advertised.

        Thanks so much for letting me know about this issue. I’ve just looked on three different browsers and I don’t see the problem. I’m going to give it a try on another computer. It would be helpful if you could tell me, was it a small ad within the recipe that got bigger when your mouse went past it? I’ve only recently put ads on my blog and am learning about how to do it correctly. I’m part of a trial with BlogHer for putting ads within the recipes. I’m wondering if that is the problem. Thank you again for letting me know, I truly appreciate it.

      Robin, I am so sorry. I’m taking part in an ad trial with BlogHer. There is clearly a glitch, if you don’t mind, could you trll me what you were viewing thd recipd on (browser, ipad, etc) so thaf I can pass on be feddback snd make sure it doesn’t happen again.

    I’ve been very leery of trying this type of recipe in the slow cooker due to all the negative reviews and comments I’ve read….quite frankly, it’s scared me off. BUT….I love pumpkin, bread pudding AND my slow cooker! I have to give this a try! My question is, I wouldn’t be serving this as a breakfast dish, but as a dessert, so I would increase the amount of brown sugar per your suggestion for a sweeter variation. Do you think I could double all the ingredients for my 7 quart oval slow cooker? And if so, would I have to lengthen the cooking time? Thanks for the recipe and for your help!

      Pam, I don’t think you could simply double it. The outer edges of the pudding end up browned by the time the middle cooks. I’m pretty sure that if the pot was bigger and there was a larger amount of contents, the edges would burn before the center was cooked. Ic I nedddd to do a larger amount, I would consider baking it in the oven. If you do try it though, I’d love to find out how it turns out.

    This sounds delicious, and I would love to wake up with the pumpkin pie aroma throughout the house. You have me wondering how the traditional bread pudding would work in the crock pot for an easy no fuss dinner dessert.

  10. I really love this, Christine! What a treat! I love using my slow cooker for dinner, but having to leave it on overnight definitely made me nervous as I knew I wouldn’t be checking my recipe to make sure it wasn’t overcooking!

  12. This is the second crockpot recipe I’ve seen where something was baked in the crockpot- and how on Earth did I NOT know that was possible!? This bread would be so perfect to wake up to! I don’t own a slow cooker (yet!) but I really think it’s time to invest.
