This is an easy asparagus appetizer with parmesan cheese. It's an example of a healthy recipe that you can easily make when entertaining.

I’m not really a huge football fan. By that I mean that I can’t remember the last time I watched a game.

Oh wait. Yes I do.

It was last year’s Super Bowl!

What is it about Super Bowl that makes us all, even the non-footballers, drop everything to sit on the couch and watch grown men run full speed at each other in pursuit of an oddly-shaped ball?

Is it because we all desperately want to know who the champions will be?

Nah.

Is it the sometimes controversial half time show?

Nah.

Is it the commercials?

Nah.

Is it the food?

Oh yeah. Of course it is! Super Bowl is ALL about the food.

Super Bowl is one of those events where our greasy cheesy dreams get laid out on the table for us to experience in real life. It’s one of the only days I can think of where I don’t question the ability to just sit there eating bad-for-me stuff for hours on end.

But all that has changed this year. This year I’ve been lucky enough to be on the receiving end of a slew of healthy tips for Super Bowl food. It all happened here in this video chat with Katie from Katie’s Cucina and Liz from The Lemon Bowl. Liz specializes in the healthy made delicious and so this girl knows her stuff! And she totally schooled me about the problem with my nonchalance towards overindulgence on this rare couch potato holiday.

    I love soft pretzels and will give this a try one day. I’ve been sneaking in whole wheat flour in most of my baked goods lately. The kids don’t really realize and they still love the food. :) We haven’t entertained in quite some time but I always made a buffet with finger foods and made sure to always serve lots of veggies and salads.
