A Lemony Week
It’s been a lemony week at my house. I made the spectacularly simple yet spectacularly brilliant Lemon Zest Pasta from Rod at Live Pretty for dinner on Monday night.
On Tuesday morning I told you my tips for saving lemon zest. And then Tuesday evening I chatted about some lemony goodness with Katie (from Katie’s Cucina) and with Julia and Beth from Live Pretty.
Since then I’ve been taking the gals’ info to heart and have been squeezing lemon juice into and over everything. I mean, how often do you come across something that’s good for you AND tastes great?
All this lemon squeezing has reminded me about the time that J and I were welcomed into a strangers yard to pick her oranges and lemons. They may have been the weirdest fruits I’d ever seen but the Citron Pressé that resulted was beyond divine.
Now it’s almost Friday and I’m thinking about ways to turn my lemony week into a lemony weekend. For inspiration I’m going to sit down with an ice cold glass of Citron Pressé and check out these great recipes:
Lemon Zest Pasta from Live Pretty
Watermelon Lemonade Spritzer from Live Pretty
Simple Lemon Curd from Live Pretty
Lemon Bread from Live Pretty
Chicken Piccata from Live Pretty
Lemon Herb Dressing from Katie’s Cucina
Preserved Lemon, Cantaloupe and Feta Salad from me
Sippin’ Limoncello Cocktail from Live Pretty
Lemon Shortbread Cookie Bars from Live Pretty

I promise, we’ll do the lemon rosemary potatoes within the upcoming weeks. It is a great addition to any family meal!
I had a blast chatting. I’m finding myself using lemons like crazy this week, too!

Very interesting and informative. If you have something salty and don’t have the time to cook a potato in it, I have also used lemon to cut the salt. It works perfect. That potato recipe mentioned sounded really good, but I don’t see it listed here.
No, that recipe isn’t listed. I think Julia said that they have one more recipe to add to their lemon collection on their blog and that one is it. I do hope she posts it soon since I really want to try it. Thanks for the salt tip!
