Easy L’il Fro Yo Sandwiches

Earlier this week I told you about the Christine and Katie Ice Cream Chat featuring Samantha from Sweet Remedy. I also told you that I’m going to win the ice cream maker attachment from Katie’s Ice Cream Social Giveaway. I’m so excited about my plan to win that I had to make something ice-cream-like for my freezer. These quick and easy little frozen yogurt sandwiches were just the thing.

My son J LOVES these. He also loves to help me make them. So easy and such a healthy summer snack for us to share on lazy afternoons.

These are a simple and healthy alternative to bought ice cream sandwiches. Best of all, they use ingredients that I always have on hand. If my four-year-old is helping me make them, I use one of those tubes of yogurt so that he can squeeze on the filling, which he loves to do. But any flavored yogurt will work.

Serves: 4

Ingredients
  • 4 graham crackers, broken in half width-wise along the cracker’s perforation
  • 2 ounces flavored yogurt

Instructions
  1. Place four of the graham cracker halves onto a freezer-safe plate. Dollop one quarter of the yogurt onto each half and then top the yogurt with another cracker half. Put the plate into the freezer, making sure that it’s lying flat, and freeze for at least one hour.

    I wasn’t sure if homemade ice cream would be worth all the hoopla, but now that I have an ice cream maker i can make it exactly how I want it. There’s no going back for me! Hope you’ve been well – life has been a little crazy here lately…

      “Opposite of s’mores” Carly, I love that! You’re right. But now you’ve got me wondering what a marshmallow is like frozen and if it could be an interesting treat. You gotta know that I’m throwing some in there right now! Let me know how the kids like them :).

        My sister and brother in law got me a subscription to the Food Network magazine for my birthday last year. This month’s issue has a section on food that is tasty frozen. Under their “things we thought would taste good frozen but didn’t” list was marshmallows. That said, they also included chocolate chip cookies and my husband loves frozen homemade chocolate chip cookies.

          Yet another reason to give it a try! If they were wrong about the cookies, they could be wrong about all kinds of things! I ran out of time yesterday and then forgot. I’ll try again. I’m also wondering about the marshmallow fluff that they sell here in the US.

          Hey, do you like Food Network Magazine? I’ve never had a good look at it. My FAVOURITE is Fine Cooking Magazine. Very few ads (if any. Can’t remember). Really great variety between quick things for dinner, using fresh ingredients and, most importantly to me, learning new or difficult techniques or styles of cooking. Worth having a look at if you like food mags.

  8. Love them! And I just pinned them. I’m adding this to my Friday fun list! E and I usually make smoothies but this could be a fun substitution!
