Homemade Instant Oatmeal

Imagine it: A bowlful of *real*, healthy, fiber-filled, nutrient packed, squidgy, warm and comforting oatmeal in just one minute (time required to add brown sugar, blueberries and a drizzle of milk not included).

What a discovery! This has truly revolutionized our mornings.

It’s so easy that I can even manage to get everyone’s porridge ready before the coffee’s brewed. And then I sit down with my hot mugga, my sweet bowlful, my hot hubs and my sweet kids to begin our day. Yes, it’s true: There really are days when it’s that perfect (or at least, there was that one time….)

O.K., there is this one detail that I forgot to mention above. You have to start this the day before. But really, it’s easy. And fast. Super-easy. Super-fast. Note that instead of the combo of old fashioned oats and steel cut oats you can just use one type. If doing so, use a total of 4 cups old fashioned oats or a total of 2 cups steel cut oats.

6-8 servings

Ingredients:

  • 8 cups water (or 4 cups water and 4 cups milk, but see * below)
  • ¼  tsp salt
  • 2 cups old fashioned oats
  • 1 cup Irish steel oats
  • Optional toppings: brown sugar, maple syrup, blueberries, banana slices, flaked almonds, milk

Method:

  1. While making dinner or before going to bed, pour the water into a large pot. Cover and bring to a boil over high heat. Add the salt.
  2. Stir in the oats. Stir continuously over high heat for one minute. Remove from heat. Cover. Put the pot directly into the fridge or allow it to cool on the counter before putting it into the fridge.
  3. In the morning, fill a bowl with about 1 cup of the now-cooked but cold oatmeal. Warm it in the microwave for 1-2 minutes. Pile on some toppings. Perfect accompanied by the people you love (and/or by a cup of coffee).

Note: This makes enough for my family for two mornings. After Morning #1, cover the pot and put it back in the fridge. On Morning #2 you might notice that some liquid has separated from the cooked oats. Not to worry! Give it a stir and it will happily reunite.

*If using a combination of milk and water (or all milk for that matter) as the base for you oatmeal, make sure that your milk doesn’t burn on the bottom of the pot and that the pot doesn’t boil over. To do so, heat the water + milk more slowly (over medium heat) and stir very often.

    It’s very apetizing. A homemade oatmeal is a good food to start your day. And it’s delicious, too. Is there any alternative for Irish steel oats? I don’t have any and I would love to make an instant meal like this.
